Bridesmaid Lunch Ideas
With Spring and Summer wedding season upon us, comes lots of other entertaining opportunities, like bridal showers and bridesmaid lunches. With all of the craziness of wedding festivities, a bridesmaid’s lunch can be a great way to take some quieter time to thank the special women in your life for being part of your special day. They mean the world to you -— here’s your chance to let them know. It’s also nice to have some time to focus on them, since all the rest of the attention during this time is focused on you!
Creating a menu where you can do most of the prep work in advance, means that you can spend more time with your guests. An elegant Mexican menu allows for you to do a lot of the work in advance and is a great option for a festive and fun lunch. You can serve pitchers of watermelon margaritas and non-alcoholic agua frescas, Start the meal off with bowls of guacamole, salsa and chips — my Ruffle collection, especially the heart shape plates, always feels really right for a special lunch — and then move into some rice salads and a make your own taco bar, which allows everyone to choose what they want, and create their own mini masterpieces. Put out a basket or bowl of warm tortillas and several filling choices: think ground beef, fresh chorizo, shredded chicken, roasted vegetables, and sauteed shrimp. More salsa and guacamole. And then smaller — or bigger — bowls of toppings: shredded cheese, lettuce, diced onions, sliced radishes for crunch and some cilantro and other herbs.
Easy Guacamole Recipe
2 large ripe avocados, halved, pitted, peeled, chopped
Juice of 1 lime
Kosher salt
2 tablespoons chopped fresh cilantro
Mash the avocados, lime juice, and a pinch of salt in medium bowl with a fork until thick and smooth. If the guacamole is thicker than you like you can mix in 1/4 cup water 1 tablespoonful at a time until mixture is creamy and smooth. Stir in the cilantro. Season with salt.
